Bison & Pork Summer Sausage with Cheese

Summer sausage got its name from settlers who were looking for a way to preserve their meat during the hot summer months in a time before refrigeration.  Luckily for us, the recipes were passed along from our German and Czech relatives, and we’re making it the same way today.   This version includes American Bison, fresh pork and cheddar cheese. – approximately 16 oz. each
